Many people like to eat strawberries, I also like strawberries, but I do not know if you think, whether it is beauty strawberries, or cream strawberries, taste no "strawberry flavor", as insipid as water. If so, there may be too much pesticide on strawberries.

I wrote an article entitled "vegetables and fruits now taste worse than before, not because your delusions have been scientifically proved." if you are interested, you can click on the hyperlink to read it. For example, sweetness usually comes from the amount of glucose or fructose dissolved, while aroma comes from volatile compounds such as esters and terpenes. If these ingredients are reduced, the natural flavor will become worse.

Source of composition comparison between white strawberry and red strawberry: pesticides given to fruits in the literature, one of the principles is to destroy the cellular structure of harmful fungi, but this is a double-edged sword, pesticides in the process of eliminating harmful fungi, interfere with the production of these basic flavor and nutritional compounds.

To find out the truth, a team led by Diao Jinling, an associate professor of pesticide analysis and environmental toxicology at China Agricultural University, studied the pesticides sprayed on strawberries: BOS and DIF, to see if they really made strawberries lose their strawberry flavor.

Pyridinamide is a new nicotinamide fungicide, difenoconazole is a triazole fungicide, both of them are mainly aimed at the fungal diseases of fruits and vegetables, and can control strawberry powdery mildew, ring disease, leaf spot and black spot.

Effects of Alfalfa volatile Organic compounds (VOCs) on Botrytis cinerea and Strawberry Fruit Source: literature, but the mechanism is not the same, the action of acetamidoxime is through the inhibition of succinate coenzyme Q reductase (also known as complex II) on the mitochondrial electron transport chain. The mode of action of difenoconazole is to interfere with the C14 demethylation of pathogenic bacteria and inhibit the biosynthesis of ergosterol, which makes sterols stay in the cell membrane, damage the physiological function of the membrane, and lead to the death of fungi.

The scientists planted three groups of strawberries under the same conditions. When the strawberries were still green, they gave two groups of them acetamiprid and difenoconazole, respectively, while the third group did not receive any pesticides.

If you just look at the appearance, no one can see the difference between the three groups of strawberries, all ruddy, full and shiny. But if you look inside, that is, the composition of strawberries, they change a little.

Processing sources of three groups of strawberries: literature scientists found that strawberries sprayed with pesticides contained much less sucrose and vitamin C than those without pesticides. In addition, some of the sugar in the pesticide-treated strawberries is turned into acid, so it doesn't taste sweet. And scientists have found that some oxidation reactions in pesticides also inhibit the production of strawberry flavor and aroma components.

Subjective evaluation of three groups of strawberries: if the literature compared two groups of strawberries sprinkled with pesticides, the scientists found that the strawberry flavor loss was more severe in the group treated with BOS.

After further research and observation, scientists found that pirixide has a direct effect on gene regulation in the cellular pathways responsible for the production of sugars, volatile compounds, nutrients and amino acids. This assessment was also verified by a blind taste test, in which people who tasted three groups of strawberries always preferred strawberries without pesticides.

Photo Source: giphy if the pesticide left on the strawberry is washed off, it may just make the strawberry tasteless, but if the pesticide is not washed clean, it will not only be not delicious, but may also cause harm to your health. In Europe, a study by the Pesticide Action Network (PAN) found that 1/3 of apples and half of blackberries on the market have pesticide residues, some of which are linked to health conditions such as cancer, heart disease and congenital malformations.

Of course, the results of the study will not allow strawberry growers not to get pesticides, after all, no pesticides are likely to lead to strawberry diseases, and then reduce production. If you can't eat strawberries, you can't discuss whether there is strawberry flavor or not.

Strawberry powdery mildew map source: 51agritech's research is more about the mechanism, and maybe someone can come up with a suitable strategy in the future, which may allow strawberries to harvest while retaining more strawberry flavor. Who knows?
