As long as you log in to exchange using the outlook APP provided by Microsoft, the IP recorded in the log is a foreign IP.

After the inquiry and test on my side, I did find a similar situation. Please confirm that this is an Outlook feature to provide more Outlook-based features (such as key inbox "Focused Inbox"), that is, when you connect to On-premises Exchange or O365, you will connect to Microsoft's unique server for authentication. After testing, this is a unique feature of Outlook, so the IP you see is Microsoft's IP. If you need to check the user's own sending network (such as home Wifi,4G network IP), it is recommended to use other mail clients that support ActiveSync protocol (such as mobile phones or other third-party clients). In this way, you can see the real IP in IIS log (if the user uses × ×, the real IP will be hidden, which is due to the × × feature).
