MySQL 5.6 Default Character Set

Note: default is utf8, support utf8mb4.

MySQL 5.7 Default Character Set

Note: the default is utf8, to this version of the production environment we will use utf8mb4.

MySQL 8.0 Default Character Set

Note: after a long time, 8.0 finally supports utf8mb4 by default, we will use utf8mb4 in natural production environment.
